Pumpkin Cheesecake Squares

Pumpkin Cheesecake Squares~
1 cup crushed graham crackers
3 tbs sugar
1 tbs flour
¼ cup margarine, melted

1 cup canned pumpkin
4 ounces reduced fat cream cheese, softened
½ cup sugar
1/3 cup skim milk
1 egg
1 tbsp flour
1 ½ tsp pumpkin pie spice OR ( ¾ tsp cinnamon, ¼ tsp allspice, ¼ tsp ginger and ¼ tsp nutmeg)
1 tsp vanilla

Spray an 8x8x2 baking pan with nonstick cooking spray – set pan aside.

In a mixing bowl combine the crushed graham crackers, 3 tbsp sugar, 1 tbs flour, and melted margarine. Press mixture onto bottom of prepared baking pan and bake in a 350 degree oven for 8 minutes.

In a mixing bowl combine the pumpkin and the cream cheese. Beat with an electric mixer on medium speed until smooth. Add ½ cup sugar, milk, egg, 1 tbsp flour, pumpkin pie spice and vanilla. Beat on low speed until combined. Pour over baked crust.

Bake in 350 degree oven for 30-35 minutes or until filling is set. Cool thoroughly in pan on wire rack. Cut into squares. Store any leftovers in refrigerator. Makes 16 servings.
